The Starting Point.

The USA Cheese Guild needed more than shelf presence. They needed professional chefs in the UAE to genuinely understand American artisanal cheese — not as a substitute for French or Italian, but as a category worth choosing.

The challenge was to transform a culinary experience into a credible brand engagement initiative, one strong enough to influence behavior, build trust, and drive measurable sales outcomes.

How we did it.

ICCA and the USA Cheese Guild co-created the USA Cheese Specialist Program from the ground up — a three-level certification program structured across Associate, Intermediate, and Advanced levels, each delivering 16 hours of Continuing Professional Development.

This is not a series of tasting sessions — it is a structured sequence of experiential workshops, designed to build a strong foundation of knowledge and inspire real-world application through full sensory immersion.

Upon completion, chefs receive the USA Cheese Specialist certificate, jointly awarded by the USA Cheese Guild and ICCA Dubai. The program is fully sponsored — free to all learners, with resources provided.
